Albanian mountain tea

You might have seen our other recipe for Albanian honey, olive oil and mixed nuts. It’s something that’s become a kitchen-cupboard essential in our house and is perfect for those moments when you need a quick energy boost.

In one of those moments, I had an idea. Why not combine the benefits of Albanian honey with Çaj mali, Albanian mountain tea that’s also said to be packed full of health properties?

This easy recipe is exactly that and brings together two of the most essential ingredients our family has been using as part of a healthy lifestyle for generations.

You can enjoy a spoonful of this or mix it with warm water to make a tea. I’ve found this honey is also great to use in baking recipes where you can use the honey as a substitute for sugar.


INGREDIENTS

Good quality, natural honey.

Albanian Çaj mali (Albanian mountain tea)


METHOD

  1. If you have fresh mountain tea that is still on the stems, carefully remove the tea and crush it a little using a pestle and mortar to break it down and make it easier to infuse into the honey.

  2. Mix the hone and tea together in an airtight jar and leave it to infuse for a few days.

  3. After a few days, the honey is ready to use.
