ASPARAGUS & MANCHEGO
Serves 4 for tapas, Ready in up to 10 minutes
Sometimes the most delicious recipes are the most simple and I think this easy tapas dish is definitely testament to that.
Chargrilled asparagus tips, topped with olive oil, shavings of Spanish manchego cheese and seasoned well, it’s as simple as that.
INGREDIENTS
Bunch of asparagus tips (minimum 125g)
Manchego cheese, grated into thin shavings
Salt & Pepper
Olive oil
METHOD
Heat a griddle pan and then cook the asparagus tips until they soften and are lightly charred all over.
Remove from the heat, drizzle generously with olive oil and season with a little salt and pepper.
Finally, top with the manchego shavings and serve hot.
