QUINCE JAM

Makes At Least 600g of Jam (Depending on the Size of Quince), Ready in 15 Minutes

The smell of fresh quince is simply divine!

Actually in Albania, Grandmothers would keep quince in their wardrobe so that the scent would gently perfume their clothes with their soft citrus notes.

As well as smelling lovely, quince also makes an amazing jam that you can enjoy with both savoury or sweet dishes.


INGREDIENTS

2x Quince, cored and grated

500ml water

1 Lemon, zested

1 Lemon, juiced

300g caster sugar


METHOD

  1. Heat a pan and add the grated quince, water, lemon juice and zest and cook for around 15 minutes or so until soft.

  2. Add the sugar to the pan and bring to the boil on a high heat, stirring regularly.

  3. Once boiling, simmer over a low heat for at least half an hour until the mixture has thickened a bit.

  4. Once ready, if you’d like a smoother texture, you can blend the jam with a hand-held blender.

  5. Leave to cool completely and transfer to a sterilised jar.

  6. Keep in sealed jars for 6 months and once opened, keep in the fridge and use within 2 months.
