GREEK CHICKEN & LEMON SOUP

Serves 2, Ready in 25 Minutes

Fresh lemons

This delicious, simple soup is known as Avgolemono in Greek and you’re going to love it! All you need is 5 ingredients and some salt, pepper and olive oil!


INGREDIENTS

Up to 1 litre of chicken stock

40g rice

4 eggs

1x lemon, juiced

Small handful of dill or parsley, chopped

Salt & Pepper

Olive oil


METHOD

  1. Bring the chicken stock to the boil and add the rice.

  2. Turn down the heat and simmer for 20 minutes or so until the rice is soft.

  3. While the rice is cooking, beat the eggs, lemon juice and chopped herbs in a bowl.

  4. When the rice is ready, quickly whisk the egg mixture into the stock to thicken it up.

  5. Season well & squeeze in a little more lemon if you like before serving and topping with some fresh herbs.
