BLOOD ORANGE, RADICCHIO & FENNEL SALAD

Serves 4, Ready in 5 Minutes

Blood oranges are in season during the early months of the year and they are just brilliant! They look amazing, taste amazing and can be used in a variety of dishes.

I love this salad. It’s super simple but the flavours are just perfect and it’s a great way of using beautiful blood oranges while they are in season.

I love serving this alongside roast lamb or grilled harissa chicken. It also works brilliantly with cheese like burrata.


Ingredients

For the salad:

250g Red radicchio, leaves separated and ends chopped

1 Fennel bulb, finely sliced

2x Blood oranges, peeled and sliced

Handful of pomegranate seeds

Small handful of fresh dill

For the dressing:

2 Tablespoons olive oil

2 Tablespoons balsamic vinegar glaze

2 Tablespoons pomegranate sauce

1 Tablespoon Sumac

1 Tablespoon Honey

A little blood orange zest

Salt & Pepper


METHOD

  1. Assemble the radicchio, fennel & blood oranges on a serving platter.

  2. Sprinkle the pomegranate seeds over the salad.

  3. Break up the dill by hand and sprinkle across the salad.

  4. Mix the ingredients for the dressing in a small bowl and drizzle over the salad when serving. Make sure you taste the dressing before serving and add more of any of the ingredients to make it to your taste.
