GREEK SALAD

Serves 4 As A Side, Ready in 5 Minutes

Ah the Greek salad! It’s such a classic isn’t it? It’s also one of the most popular salads in Albania and you’ll find this at the table in many homes and restaurants alongside fish and meat.

My trick is to slice the red onion quite finely and coat this in a little lemon juice to remove that strong onion taste from them.

INGREDIENTS

1 Red onion, finely sliced

1 Lemon, juiced

200g Feta cheese, chopped

1 Cucumber, chopped

4 Salad tomatoes, chopped

8 Tablespoons of black olives (around 115g)

Olive oil

Pinch of salt

Lemon wedges, to serve

METHOD

  1. In a salad bowl, mix the onion slices with the lemon juice and set aside while you prepare the other ingredients.

  2. Mix in the tomatoes, cucumber, feta, olives and season.

  3. Drizzle with olive oil just before serving with a couple of lemon wedges.
